Essential oils are highly concentrated volatile oils that are extracted from plant matter; generally plants, trees or flowers.  Their history can be dated back to antiquity for a plethora of medicinal and therapeutic uses.

The most common method of extracting these precious oils is by steam distillation.  Basically, what takes place is that the steam moves through the plant matter which vaporizes the volatile oils.  The plant vapors are then condensed into liquid as they move through the coils of the still and cool.  This method successfully captures the entire essence of the plant in a very condensed form.  A few drops of essential oil could very easily be equivalent to a cup or two of herbal tea.
